Britannia cake: Yummy in my Tummy

The weekends are here and so our blogs. At Cookery Expressions we are happy to share our love for baking with everyone. Here’s to sharing one of our favorites cake recipes for fresh, flavorful, nutty, and (mostly) healthy made to add joy in our daily lives!!

Below are the ingredients and methodology for Britannia cake which is a replica of a cake from an FMCG brand Britannia, a childhood favorite for all of us.

First things first, we need to gather following ingredients as listed below


Flour: 1 cup

Custard Powder: ½ cup

Baking Powder: 1 tsp

Salt: 1 pinch

Granulated Sugar: ¾ cup + 1 tbsp

Oil: ¼ cup + 1 tbsp

Milk: 1 cup

Pineapple Essence: 1/2 tsp

Tutti Frutti: 1/3rd cup

Chopped Cashewnuts: 2 tbsp

Once all the above ingredients are ready, preheat the oven to 180 degrees. We need to grease and dust an 8” x 4” rectangular tin. Alongside,  sift flour, custard powder, baking powder, and salt. In a separate bowl, we will whisk granulated sugar, oil, milk, and pineapple essence and add the flour mix.

Now comes the major tricks, we will use the cut and fold method to mix (a technique used to gently incorporate one ingredient into another with a spoon spatula to create little aeration). Then add some quantity of tutti frutti and chopped cashew nuts and pour into the prepared tin and sprinkle tutti frutti and chopped cashew nuts on top. It needs to bake for 35 mins and then we need to let it Cool.

After some time, it can be cooled at room temperature or can be served hot!!
